A Pancake Breakfast

I’ve always made pancakes for my children, relatives and their friends. This week, I had my adult niece and nephew visiting, so for breakfast one morning, I quickly made them pancakes.

Most people have a dish or two they cook really well. Mine is making pancakes. My sister in law asked if I measured the flour and the ingredients and I replied, “No.”

I have a few tricks that I feel make my pancakes special. One of them is making sure I keep the mixture cold. I go as far as putting in ice-cubes after blending the ingredients together.

My niece and nephew were so excited to put the main topping of condensed cream on the pancakes. Their plates lined up as soon as they were finished, just like old times. As I fried they ate! I really miss those days.

I’m glad we got to re-live them this week here in Hanoi.
